Banjo-Kazooie

Attachment There's an unused firefly sprite which appears similar to the Beehive's Bee sprite which even uses the same wings. It's possible this was intended to be used for the world Mad Monster Mansion, the only level set during night.
Rocket: Robot on Wheels
1
There are many cheat codes programmed into the game that cannot actually be found in the game. These were posted on Sucker Punch's website and can still be found elsewhere online.
Star Fox Adventures
1
There is evidence in the game's data that General Scales was meant to have a full battle with both Fox and Falco, but it was cut from the final game.
EarthBound
1
Attachment In the issue of Weekly Famitsu published in 9th of September 1994, Itoi refers to the battle backgrounds as a "Video Relaxant." The Video Relaxant was going to be an in-game item and was originally referred to as a "Video Drug". It can still be found in the game's files. It has no function and the description of the item is "What the hey is this?"
Mario & Luigi: Partners in Time
1
Attachment There is an unused Whomp character in the game's data. He has several animations, but doesn't appear anywhere in the game.
Paper Mario
1
Attachment There was once an "Anger's Power" badge in the beta for Paper Mario. It would cause Mario to gain a dark red tinge of color, and pose angrily. Mario's turn would be controlled automatically in battles, while the partner is controlled by the player. Mario's attack would increase by 2, but is AI neglects common sense, such as jumping on top of spike enemies. The effect is very much similar to the common "Berserk" status of many RPGs.
EarthBound

Attachment An unused sprite of Mr. Everdred as a ghost is present in the game's ROM. It is assumed that either he was going to be a party member at one point during development (when one of the party members faints, they will appear as a ghost) or Spoiler:when Mr. Everdred was beaten near Jackie's Cafe in Fourside, a ghost would have flown out of his body. Its true purpose has never been confirmed.
Call of Duty 4: Modern Warfare
1
There's some unused dialog for Captain MacMillan on the game's disc that is never played in-game.
Grand Theft Auto III
1
Officially, the protagonist's name in this game is "Claude". Hacking into the game's files, one can find a text string saying "DEFNAME = CLAUDE" which not only made it clear his name was Claude, but also hinted at a removed mechanic allowing the player to rename the main character. As a result, many also believe he is Claude Speed, the protagonist of GTA2.

Sam Houser claimed that the GTA3 protagonist did not have a name as he was merely the player's avatar, but would later be named "Claude" as of San Andreas, as everyone had taken to calling him that.
Grand Theft Auto: San Andreas
1
The mission "Saint Mark's Bistro" has CJ temporarily return to Liberty City in order to carry out a hit for Salvatore. Although the player cannot see much of it, a large part of Portland, Liberty City has been modelled, although not much of it is solid.

One can use cheat devices (or mods on the PC version) to reach Liberty City and have a look around, although having a jetpack is recommended.
Grand Theft Auto III

Attachment There were plans of putting a homeless man named Darkel in the game. His missions were to supposedly have you blow up buildings. He was removed after 9/11 attacks, possibly due to the developers thinking Darkel's character was in bad taste. Despite this, Darkel still remains listed in the manual credits and his character remains in the game's data.

Rockstar claimed that Darkel was removed because he did not tonally fit with the rest of the game, and his removal wasn't related to 9/11.
Metroid
1
Samus was originally planned to have unique sprites and animations for whether she was facing left or right. These sprites are still stored within the game's ROM. This animation idea would eventually be seen in Super Metroid.
Super Smash Bros. Melee
1
There are actually numerous differences between the NTSC and PAL versions of Super Smash Bros. Melee. Many characters and their moves were tweaked to rebalance the game.

The language setting in the PAL version can be switched between English, French, German, Spanish and Italian, with the French and German settings having new voice overs for character name changes during character selection. In order to fit these additional languages on the disc, the Japanese language option and the Special Movie were removed.
Bubble Bobble

Attachment In arcade game's code are a number of slot machine icons, possibly intended for use in a bonus round that was never made.
Resident Evil: Operation Raccoon City
1
Attachment In the PC version of the game, there are a number of unfinished textures and loading screens from Star Wars: Battlefront 3. It was rumored that Slant Six Games was developing Battlefront 3 before it was ultimately cancelled.
Kingdom Hearts Birth by Sleep
1
Attachment Through the use of cheating devices in the Japanese version of the game, the player can obtain a version of the Kingdom Key D called "Light Seeker".
Dragon Spirit: The New Legend
1
Attachment In the Japanese version of Dragon Spirit: The New Legend, if the player presses "select" 20 times during the good ending in which Iris is on top of the dragon's head, they will be able to lift her skirt up.

The code was removed from the international release, but the upskirt sprite graphic still remains inside the ROM.
Kingdom Hearts Birth by Sleep

Attachment In Deep Space, Pleakley from the Lilo and Stitch film was originally going to be present. He was removed for unknown reasons, but a character model can still be found in the game's code.
Final Fantasy VII
2
Aeris, after being brought back via a cheat device, has dialogue in discs 2 and 3. This seems to imply that either Spoiler:she was not meant to die at the end of disc 1 or that Spoiler:she was intended to be revived later in the game.
Mortal Kombat
1
In the audit menu of the arcade version, there is a useless row of text that says "ERMACS" (which stands for Error Macros) and is listed under "Reptile Battles." Because of this, players thought that Ermac was a hidden boss like Reptile. Ermac became a running joke for the developers, so much so that they even made him a real character for Ultimate Mortal Kombat 3, with his BIO saying he was hiding in the first Mortal Kombat.
