Star Wars: Knights of the Old Republic

Several sections of Tatooine were cut out due to time constraints. The Star Map was originally to be located in a Sarlacc pit instead of a Krayt Dragon's lair. Players would have to find the sarlacc in a cave complex and then enter it without getting eaten. Later the player could become a messiah of the Sandpeople and lead them to stand up against Czerka.

Attachment It's possible Birdo was originally considered as a playable character. A pink version of Yoshi's Egg 1 kart was found in the game's data, a possible reference to Birdo's pink eggs.

There are nine unused tracks in the game. There is an unfinished GCN Mario Circuit, two Waluigi Pinball beta courses, an unused battle track, four test courses, and an unused Wario Stadium replica.
Pokémon Black Version

There are unused 3D models for both Dialga and Palkia from the title screen of Diamond & Pearl. There are also logos for Pokemon Diamond and Pearl in the data, probably because Black and White were built on top of those games.
Left 4 Dead

In the Left 4 Dead (left4dead) and Left 4 Dead 2 (left4dead2 and left4dead2_dlc3) sound files, there are some sounds similiar to a dog. All of them seem to have been cut, but they still exist in the game files. The attack sounds for "zombiedog" were recycled for the Hunter when he'd attack with his claws. This could explain why the Hunter yelps like a dog when he is killed. According to some of the Church Guy's "combatcolor" sound files, the "dog" sounds seem to have been re-made for when he would turn into a Hunter.
Left 4 Dead 2

A Special Infected called "The Leaker" was being developed. It had similar attacks as the Spitter and Boomer, and the ability to plant itself in the ground and act as a mine bomb. It was removed because the Survivors could run away from it, as the Leaker would alert the Survivors that it was planting itself.

However, it is still possible to play as The Leaker with console commands by using "Map MAPNAME Versus", then typing in console "Boomer_Leaker_Chance" and a number between 0 and 1. You will know when you are a leaker if it says "You are a/the Leaker!", or you explode on death and cause a small fire.

The "forest map select" from Doubutsu no Mori still exists in the game's code, but there's no easy way to access it.
Luigi's Mansion

Attachment There's an unused model of Mario in the game's data. Mario is stretched to Luigi's proportions and is equipped with the back straps for the Poltergust 3000. The geometry of the model is simpler than Mario's final in-game model, containing fewer polygons. Although its true purpose is unknown, it could've been from an unused multiplayer mechanic requiring both Mario and Luigi. The model was stretched out, presumably to fit Luigi's skeleton so that Luigi's animations could be used on the model. The model also uses Luigi's gloves, presumably to make his animations handling the Poltergust 3000 more accurate.

Silent Hill 4: The Room

Attachment This is one of the few Silent Hill games to not include a UFO ending. A Channeling Stone can be found in the game's data, suggesting that a UFO ending was planned but was later dropped.
Ghostbusters: The Video Game

Attachment There was a level cut from the final release of the game where the Ghostbusters fight haunted floats in the Thanksgiving Day Parade. At one point during this level, the team would have made a trip to Ray's Occult Books, which was Ray Stantz's book store in Ghostbusters II. A Dopey Dog float was supposed to be the end level boss, but was replaced with a different character. Dopey Dog was a character from The Real Ghostbusters cartoon show.

There was also a "Crowd" mechanic developed for use primarily with this level that was also cut. The "Crowd" mechanic was supposed to simulate the many people that walk the streets of New York City. This "Crowd" mechanic gave up to 1,000 individual NPCs their own AI. The members of the Crowd Mechanic successfully reacted to the Ghostbusters walking by, became scared of ghosts that appeared out of nowhere, and ran in terror when the Stay Puft Marshmallow Man appeared on the street.
Super Princess Peach

There are several test levels left in the game's ROM. In one of them, Iggy Koopa is actually the boss, but due to him having no coding, he dies as soon as you enter his screen.
Pikmin

Attachment Unused textures left in the game reveal that, at one time, it was intended for Pikmin types other than yellow to be able to carry bomb-rocks. This feature was eventually implemented in later sequels of the series.
Luigi's Mansion

There's evidence suggesting that Luigi's Mansion was going to be an N64 game. On the game's disc, there's a sound effect for getting a star from Super Mario 64 and a cropped image of Daisy's artwork from Mario Tennis. Hideki Kono, the director for Luigi's Mansion, also stated that the game was originally going to be released on the Nintendo 64.
Pikmin

There's an unused Goomba model left on the games disc titled "kuribo.mob". Kuribo is Japanese for Goomba.
Super Mario Galaxy

Unused models for Bully, an enemy from Super Mario 64, are present in the game's data, complete with animation.
Sonic the Hedgehog

Attachment In the original teaser trailer for the game, Sonic was shown to be able to transform into Super Sonic at will and not just during a boss fight. This was a feature that couldn't be done in previous 3D Sonic games, but was cut during development due to extreme time constraints. However, by hacking the game, an unused gem called the Rainbow Gem can be found and equipped. When used, Sonic performs an animation where he is supposed to transform, but is unable to turn into the Super mode and immediately drops to the ground once the animation is complete, a relic of the Super Sonic transformation feature.

In the intro is a tournament board with every character in the game. In the bottom left corner of the board you can see the team of Toad and Toadette, hinting that they were possibly planned to appear as playable characters at one point during development.
Super Princess Peach

Attachment The Koopalings were originally going to be a part of the game, but were removed for unknown reasons. Sprites for of all seven of them have been found, with Roy's shell being miscolored as green instead of pink.
Pokémon Yellow Version: Special Pikachu Edition

Data exists for a battle situation when the Trainer has no Pokémon, though it isn't actually used when entering a battle with no Pokémon in the final release. In this case, selecting any option other than Run shows the message "Hurry, get away!" This may have been a prototype for the initial battle with the wild Pikachu at the start of the player's adventure, as the player has no Pokémon at that point. It could also have been planned for a possible battle against a wild Spearow with Pikachu unable to battle, making it closer to the events of the anime.
