Attachment Michael has an unused LSPD outfit in the game's files which can be worn by hacking. It also comes with a hat, suggesting that Michael at one point wore hats.
Resident Evil 3: Nemesis

An unused still image from the game's intro sequence can be found in a Japanese promotional demo disc. The image features a cameo from Tim Robbins and Morgan Freeman, appearing as they did in The Shawshank Redemption. The image itself does not appear in the final release of the game.

An unused tech for Raine, called "Sacred Light" can be found in the coding of the GameCube version of the game. The technique is almost fully complete, possessing a translated incantation ("Life, be thy sustenance and destroy the enemy!") and animation, though it does not damage the enemy.

For the PlayStation 2 version, Sacred Light was fully completed and implemented as Raine's first Mystic Arte, performed by using her Ray or Holy Lance spells 100 times then using anyone of them in Over Limit.

The English release of the PlayStation 3 version uses the formerly unused English incantation.
BlazBlue: Continuum Shift

An unused placeholder character can be found in the coding of the arcade version of Continuum Shift 1. The character is named "Tubaki Yayoi" ("Tubaki" being a misromanization of "Tsubaki" as in "Tsubaki Yayoi", an actual character), her character select nametag is still written in the Calamity Trigger font and her main portrait is that of Nu's CT artwork with the head of Noel Vermillion's story portrait pasted on it.

In game her sprite is a static image of Nu/Lambda with "MU" written on it, meaning that Tubaki is aplaceholder for the character Mu-12, an alternate version of Noel.

There's an unused script that triggers a battle with a level 40 Entei upon contact. It might be that early in development, the Legendary dogs would have been battled normally like the legendary birds in Gen 1 instead of searching for them in the grass.

Some time after X and Y's release - and even after the release of the game's official soundtrack - a re-mastered version of the World Champions theme from Pokémon Black and White was discovered in the game's data and decrypted by the Pokémon community.
Mario Kart 8

A single unused test course exists in Mario Kart 8. It's a copy of Mario Circuit from the Flower Cup, but without music. Additionally, the orange arrow signs are not animated. According to interviews, Mario Circuit was the first track designed for this game, so this is very likely intended for testing. It works the same in Battle Mode as well.
Digimon Tamers: Battle Spirit

In the original Japanese WonderSwan release, the digivolution music that plays is a shortened instrumental rendition of either "Brave Heart", "Beat Hit!", or "EVO". In the international release, there is only one digivolution song, even though the other music files are in the game's data.

Attachment Blob originally had a move where he would turn into a bomb. He would detonate and damage himself as well as the opponent. This move was locked in the game, but can be accessed by using a Game Genie code.
Donkey Kong Land 2

Attachment There's an unused 8-bit version of the "Boss Bossanova" theme from Donkey Kong Country 2: Diddy's Kong Quest, which was removed for unknown reasons. In the final game, it was replaced with the "Crocodile Cacophony" theme for all boss stages.
Kirby's Adventure

Attachment Originally there was a cannon icon that would appear whenever Kirby was on a cannon. Even though this was cut from it's original purpose, the cannon icon can still be found by using the Mix ability: it can be seen during the roulette selection of abilities using an emulator's frame-by-frame advance feature. Oddly enough, it remains used in the French version.
Diddy Kong Racing

There are unused balloons in the game which feature most of the racers' faces. Diddy Kong, Conker and T.T. are the only racers without one of these balloons.

There are several unused voicelines that were added during the Love & War update that suggest a feature where the classes make fun of another player's weapon or hat, as well as a number of lines related to trading.
Guitar Hero: Metallica

The song "Angel of Death" by Slayer was originally cleared to be included in the game, but was removed because of the song's controversial lyrics. Metallica pressed on for Slayer to be in the game and "War Ensemble" was cleared at the last minute.
