Resident Evil 3: Nemesis

Attachment While the characters of Resident Evil 2 and 3 crossing paths was cut from the game, it was ultimately written into the manhua (Chinese comic) adaptation of Resident Evil 3.
Guilty Gear

The prototype version of Guilty Gear featured many differences in the characters' appearances and weapons. Most notably, May and Potemkin are shown to be wielding large axes.

In the final version, May uses a ship's anchor, and Potemkin fights hand-to-hand.
Tales of Symphonia

The battle in Meltokio Colosseum features Spoiler:Garr from Tales of Destiny as well as Farah Oersted and Meredy from Tales of Eternia.

Originally, Spoiler:Rutee Katrea, also from Tales of Destiny, was meant to fight alongside the others as well. Her unused 3D model can still be found in the game's data.

Proffesor E. Gadd was planned to be a playable character in the game, but was replaced with Dry Bones.

Attachment Even though the Chain Chomp item, which appeared in previous Mario Kart releases, was replaced with the Bullet Bill, it still appears in the item roulette animation. There is also an unused Purple Koopa Shell.
Kirby 64: The Crystal Shards

Attachment There was an early idea for a music based mini game in which players would play along to sheet music with Kirby, Ribbon, Adeleine, and King Dedede, but it was never implemented.
Strong Bad's Cool Game for Attractive People

A shirt normally unobtainable during Strong Badia the Free, Baddest of the Bands, and Dangeresque 3: The Criminal Projective can be accessed by adding the 32-bit value "shirtmuscles" to the game's registry. It even has its own dialogue when Strong Bad puts it on. The shirt is a refrence to the Sbmail "tanning" where Strong Bad invents a device to draw abs on their body called the Ab-Abber 2000
Skullgirls

The game was originally planned to have alternate endings for Story mode for most of the cast except Double. There is unused text of these alternate endings complete with dialogue for what appear to be choices the player would make.

Filia: Would wish for her memories back despite Samson's protests

Cerebella: Asks the Skull Heart to make Vitale Mecidi love her and only her. When she returns home, however, Vitale has gone mad and murdered everyone present except Feng just so he can have Cerebella all to himself. Feng kills Vitale only for him to get back up, turned into a monster. Cerebella and Feng flee to the country, hoping to start a new life.

Peacock: She wastes time making inane wishes that the Skull Heart could not possibly grant, much to the Heart's annoyance.

Parasoul: Seemingly kills Umbrella to prevent another Skullgirl from being made. Umbrella reassures her with her dying breath that she did the right thing.

Ms. Fortune: Goes ahead with her original plan to revive the Fishbone Gang. They are revived as mindless servants of the now Skullgirl Fortune.

Painwheel: Wishes for "Freedom". The Skull Heart frees her from human emotion and restraint, making her into an incredibly powerful Skullgirl.

Valentine: Seals the Skull Heart away to prevent it being used again knowing that it can't be destroyed so easily. However, when she faked a deception against Brain Drain, she killed a character named Christmas, who was close to Brain Drain. For the sake of revenge, Brain Drain forces a control mechanism on Valentine and turns her into the same abomination as Painwheel. As this happens, the Skull Heart mocks Valentine's efforts.
Drawn to Life: The Next Chapter

Attachment There are a number of unused sprites in the game's files that seem to show other character heads on Mike's body. This would suggest that Mike's body was used as a placeholder sprite for other characters, or perhaps even as a base when redrawing new characters. These unused sprites only have worried and cheering animations.

Women were featured much more prominently in the beta for the game, including Spoiler:having female patients in Dixmor Asylum, the female inmate being tortured in the dentist chair in the level Sexual Deviants, and an additional object in the Sorority House level, in which the player had to kill a female student.

Attachment There are unused particle effects with names that relate to the "Conga" taunt. This suggests that the taunt was originally intended to constantly spawn confetti, streamers and fireworks, which are either green or pink.

Attachment There is an unused Turret hidden in the game files called the Hover Turret. It has no programming other than to follow the player with its laser sight. It also has no model, so it shows up as a default ERROR model.

Attachment There is an unused mask hidden in the game's files called The Twister. It greatly resembles Obito's mask from the Naruto anime and was likely not incorporated due to copyright issues.
One Piece: Unlimited World RED

Attachment Hidden within each area, Pandaman can be found hiding in inaccessible areas of the map. He also appears in the form of a rarely spawning balloon in Trans Town.
Dark Souls

Attachment Three unused rings can be found within the game's data. These rings are:
• Ring of Displacement: This ring takes damage in place of its wearer, but has a fixed chance of breaking
• Ring of Blind Ghosts: It prevents its wearer's discovery by cursed ghosts.
• Ring of Condemnation: granted to those who enter a Covenant with Velka, the Goddess of Sin.
BioShock Infinite

Located in the audio data of Burial at Sea Ep. 2, there is a file called "sfx_evt_inf_alley_loop_01". While it sounds like nothing more than creepy ambient music, if reversed and sped up 150%, it's actually an altered clip of Spoiler:Sally being burned at the end of the first episode.
Doom

Attachment In the Doom Press-Release beta, dated October, 1993, the BFG9000 had a very different firing sprite and animation. The animation consisted of multiple red and green plasma orbs firing. This was later changed to reduce strain on computers at the time.

There is an unused death message that can be found in the game's files that reads, "Suddenly, Indy forgot everything he knew about handling a bullwhip and flogged himself to death."

Early in development, the main character was going to be an ostrich with multiple personality disorder. The different powers that the player could use would relate to the different personalities of the ostrich.

There was originally meant to be a cutscene that connected this game to Tomb Raider: The Last Revelation, as well as explain Spoiler:how Lara survived her fall in the Temple of Horus at the end of the game. This scene would have also introduced a shaman, Putai, who was also cut from the game during development.
