Nintendo had strict licensing policies for the NES as a way to encourage quality over quantity, in hopes of avoiding the fate of Atari during the video game crash of 1983. Third parties were limited to releasing 5 titles per year for the NES, all titles had to be reviewed by Nintendo before they would be licensed, and the console had a system to lock out unauthorized games that did not contain the necessary patented chip as a way to enforce Nintendo's control.

A combination of third-party developer pushback, legal challenges, and competition from other console manufacturers such as Sega eventually forced them to relax their policies.

John Vogal explained on his twitter that although they originally planned for Taven to be the one to defeat Blaze, in the sequel it turns out to be Shao Kahn, making Taven's ending non-canon.

An unused subaction and corresponding animation exist for Zero Suit Samus' Plasma Whip Side-B, labelled "SpecialSItemGet". There are also two other unused throwing animations for Samus labeled as "SpecialSThrowS" and "SpecialSThrowHi".

Presumably, the attack would originally have grabbed items from a distance and slung them away as a projectile, a function that would have been unique to the character. It may have been removed due to it interfering when players were attempting to hit another player with the whip.
Mega Turrican

Attachment In the game's data, there are unused sprites that appear to be Mario and Sonic frozen in carbonite in the same manner as Han Solo in Star Wars Episode V: The Empire Strikes Back. They were most likely to appear after the first mini-boss, according to screenshots previewing the game in the German magazine Amiga Games.
Final Fantasy VII
1
The original idea for the game had it set in modern New York City in the year 1999, and was intended to have a "detective story" theme, with a character called "Hot Blooded Detective Joe". The early script had him chasing the main characters, who would then blow up the city of Midgar.
Spyro the Dragon

Attachment In an early demo, there was an additional gem awarded to the player for entering the 'Return Home' whirlwind.

The mechanics of C. Viper's moveset are based on her debut in Street Fighter IV: her EX Moves cost meter, and she retains the Focus Attack technique available to all fighters in Street Fighter IV.
Franchise: Ecco the dolphin
1
According to the series creator, the name 'Ecco' is not a purposeful misspelling of the word 'Echo', but was chosen because 'ecco' loosely means 'to see' in Italian.
Super Smash Bros. Melee

Neither Roy nor Sheik appear as opponents or allies in Melee's Classic Mode (though Sheik can appear if Zelda transforms during battle). Ganondorf also cannot be fought, yet he can show up as an ally. Despite their absences, all three have their own intro poses programmed into the disc.
Twisted Metal: Black
1
Attachment In early production of the game, Warhawk was intended to be a playable character and even had pictures for the character select screen, but near the end of production, it was discovered that Warhawk was too powerful for multiplayer and the control scheme did not work well for a helicopter, so he was removed from the final version of the game.
Franchise: Spyro the Dragon

Spyro's original personality attracted a bit of bad feedback, with some people complaining that he was cocky. For all subsequent games his personality was toned down to be more likeable, and his new voice was softer.
Spyro 2: Ripto's Rage!

Attachment The back of a Pizza Hut demo disc shows the walls surrounding part of the castle contained water at one point during development.
Spyro the Dragon

Attachment In an early version of the game, the 1-Up model was used in place of the dragon statues.
Super Mario 64
3
Attachment In an interview with Satoru Iwata and Shigeru Miyamoto, it was revealed that an early, experimental build of the game had split-screen multiplayer, with Mario and Luigi as playable characters.

The game's planned multiplayer mode ended up being reworked into a Mario Bros.-style minigame thanks to the Nintendo 64's technical limitations making the split-screen concept unfeasible. However, in February of 1996 (just a month before E3 of that year), both multiplayer mode and Luigi were removed, in part because the Nintendo 64 was bundled with only one controller. These statements are corroborated by findings from the Gigaleak, a massive content leak of internal data from Nintendo in 2020 that included early assets from Super Mario 64. Among the leaked material was a model and textures for Luigi and sprites for "1P" and "2P" icons. Luigi's model is dated June 20, 1995, while the icons use the same generic font seen in the Shoshinkai demo from November of that year, rather than the custom font seen in both the E3 1996 demo and the final release.
Monkey Island 2: LeChuck's Revenge

Originally, a scene in which Wally can be seen floating on a raft, and once again losing his monocle, was cut from the game. This was because the development team felt sorry for Wally's character.
The Legend of Zelda: Skyward Sword
1
Attachment According to Hyrule Historia (pg. 23) "it was decided that all residents of Skyloft would be modeled after birds." This explains why some of the Skyloftians have bird-like names and features themselves, such as Groose's cocky attitude and his hairstyle that resembles a rooster's comb.
Epic Mickey 2: The Power of Two
1
Attachment A development screenshot suggests that the Seven Dwarfs were originally going to be in the game.
Metroid: Other M
1
Attachment In Metroid: Other M, Samus Aran has a mole under the left side of her lip. This was the first Metroid game to add this detail. However, it had been mentioned before. Co-creator of the Series, Yoshio Sakamoto, stated in an interview after the release of Super Metroid that he was the only person that knew of the location of Samus' beauty spot. A mole was also drawn on Samus' face in concept art for Metroid Prime, but did not appear in the game.
