The Rifle lacks the cocking animation. Instead, a cocking sound is played and the shooter just stands still until it's ready to fire again.

Claude is seen wearing the exact same clothes that he wears in GTA3, which is odd as it is presumed that 8-Ball got him whatever clothes that he had in the GTA3 mission "Give Me Liberty".

Girlfriend models can be used as criminals during the Vigilante mission.

During the mission, "Air Raid", Zero says, "Great kid, don't get cocky!". This is a reference to the same quote said by Han Solo in Star Wars Episode IV: A New Hope.

A sex minigame by the name of "Hot Coffee" was meant to be included, however it was cut due to controversy and the ESRB threatening to give the game an adult only rating (AO). However, it was left in the game's code and through using cheat a cheat device or hack, you could access it. When this news got to the ESRB, they threatened Rockstar again to remove it or get an adult only rating. This led to Rockstar recalling all copies of Grand Theft Auto: San Andreas and releasing a 2nd Edition which was exactly same as the original but without the "Hot Coffee" feature to be found anywhere in the code. There was an additional promotion where players could mail in their copies of Grand Theft Auto: San Andreas to get the updated edition and 30 dollars, but since almost nobody knew about it, only 2,676 people had mailed in their copies.

During the mission "Saint Mark's Bistro", a car can be seen in the yard behind the bistro. It has a unique license plate reading "4GEDIT" ("forget it"), a message to the player to forget about exploring Liberty City.

Deleted audio for the game reveals that Rockstar Games had intended for the high ranking Forelli Family gang member in Saint Mark's Bistro to be called Marco Forelli. However, as the audio was not used, the character remains un-named.

Some pedestrians spawn high up on buildings or in the sky and fall to the ground. Although this could be a glitch, it's also possible that these events are easter eggs, as Rockstar previously created the game 'Lemmings' when they were DMA Design.

There are locations in the game where pedestrians commit suicide. One example is a photographer found near Flint Intersection. A pedestrian will spawn there randomly, and take a picture. They will then walk into the water and drown.

The Jetpack has an unused HUD icon, although it can still be found in the game's files.

In the mission 'Madd Dogg's Ryhmes', one of the security guards playing a video game (possibly DRIV3R) says, "This sucks, I mean, how could Refractions mess up so bad? You suck Tanner!" This is actually an Easter egg mocking the game DRIV3R, which some consider to be a Grand Theft Auto clone; the main character's name is Tanner, and the game is made by "Reflections".

In the mission, Nines and AK's, during the cutscene, Emmet is wearing a red shirt under his jacket, but during gameplay, while learning how to shoot, Emmet is wearing a white shirt under his jacket.

The PSG-1 was originally going to make an appearance, but it was removed. It can still be seen in Ammu-Nation, and the Sniper Rifle's HUD icon resembles the PSG-1.

The TEC 9 has no recoil animation.

In The Introduction, a twenty minute video that was available with the North American PS2 Special Edition of GTA San Andreas or the official soundtrack double CD, the appearance of Sex Club Seven in the Liberty City scene is a canonical error. Before 1998, it was called Paulie's Revue Bar. This happened because Rockstar wrote GTA Liberty City Stories after GTA San Andreas.

The original beta name for Grove Street Families was Orange Grove Families. Beta graffiti around South Central Los Santos referring to the "Orange Grove Families" and the "OGF" still exist. Likewise, CJ can get a tattoo on his upper back in Los Santos that references the "Orange Grove Families". CJ will also sometimes shout out phrases related to the "Orange Grove Families" and the "OGF" during a fight.

There are unused files for the M249E2 SAW which was originally intended to be included in Grand Theft Auto: San Andreas, but was never actually in it. They can be found in the PS2 version.

The full sized Micro SMG (alternatively called Uzi) was originally intended to be featured in the game, but it was cut from the final release. It can be seen in several beta screenshots.

The beta version of Sweet wore a black t-shirt, a long sleeved white undershirt, black trousers and a black skully, which can be seen in a picture inside the Johnson House.

The beta version of Big Smoke is shown wearing a white jersey and black trousers, with Smoke having a bald head. This can be seen on the statue of Smoke in his crack palace in East Los Santos.
