Final Fantasy VI
1
Umaro was originally supposed to be a random encounter on the world map and could only be caught with bait. Hidden game data suggests Umaro was at some point intended to be able to be encountered in the World of Balance, as an unused battle complete with stats and a simple AI script exists within the game's data.

According to Hironobu Sakaguchi, Umaro has a strong sense of honor and feels like he owes a debt to Mog, because Mog shared some food with him when he had collapsed from exhaustion.
Final Fantasy VI

During development, Strago had a 65-year-old wife named Lara. They had amusing arguments with each other claiming the other will die first, but she was ultimately cut from the game. In the game's original strategy guide, Strago and Relm are said to fight with stuffed toys. This might be another idea that was tossed around during development, but in the end was never implemented. The idea wasn't used until Final Fantasy X, in which the character Lulu uses stuffed toys as weapons.
One Piece: Unlimited World RED

Through the use of hacking, unused items called Pandaman Red, Blue, Yellow, Green, White, Black, and Gold can be found. Why they were removed is unknown, but odds are they would have been items hidden in areas that match their colors.

There is an unused prerendered cutscene that shows the Power Brick flying off the top of the Information Center to heroic fanfare.

Attachment Within the game's data is a set of unused sprites showing Sonic shrinking or falling away from the screen.
Dark Souls
1
Unused dialogue from Ingward suggests that the player was supposed to fight "a Darkwraith, a servant of the Four Kings" before obtaining the Key to the Seal.

This dialogue may refer to the Undead King Jar-Eel, a cut boss from the game, as one of King Jar-Eel's weapons is a Dark Hand, which is used frequently amongst Darkwraiths.
Sonic the Hedgehog
1
An unused rendition of the Marble Zone theme can be found in the game's ROM, suggesting that the Genesis version's Marble Zone was planned to be included in the Master System version at some point.
Paper Mario: Sticker Star

SpongeBob SquarePants: Battle For Bikini Bottom

Attachment Within the GameCube version, the folder for Goo Lagoon contains two folders, "New Folder" and "Working". These files hold early versions of Goo Lagoon. Trying to run them crashes the game, but opening the HOP files shows several early assets.
Super Smash Bros. Melee
1
There is an unused audio clip of Captain Falcon saying "Come on!" and "Blue Falcon". The Blue Falcon is Captain Falcon's final smash in Super Smash Bros. Brawl, and both voice clips appear in that game. It's possible the developers were experimenting with final smashes, just as they did in the original Super Smash Bros.
Yoshi's Story
1
Attachment There's an unused piece of music that sounds similar to the tracks for when a page opens in story mode.
Grand Theft Auto IV
1

Sonic the Hedgehog 2
1
During the game's development, two beta builds were shown off to the public. The first was aired on an episode of the kids' game show Nick Arcade; the other was shown off at a New York toy show and was actually stolen from the event. The ROMs for both the Nick Arcade and Simon Wai prototypes (the latter being named after the person who discovered the ROM image) are available online and feature tons of unused content, including the elusive Hidden Palace Zone.
Fallout: A Post Nuclear Role Playing Game
1
Attachment There were plans to include a race of mutated raccoons called the S'Lanter, who had built a small community known as the Burrows. The S'Lanter and their home village ended up not making it into the game, for reasons such as not fitting in well in the Fallout world and also for time constraints, as the time needed to build and then animate the various versions of them was simply too much. The only remaining in-game mention of them is a Holodisk about FEV experiments located in The Glow.
Serious Sam II
1
Attachment Unused level loading screens included with the Deathmatch patch show there was going to be a Capture the Flag mode included with the game at one time. No coding nor models show any trace of a CTF mode, so these images are likely the only remnants from it.
The Elder Scrolls III: Morrowind
1
Attachment Unused sound clips of two of the voice actors named "Intro1aDDB.mp3" and "Intro1aJon.mp3" can be found in the games voice files. They are recordings of the male Wood Elf and male Argonian reciting the introductory speech to the game. It's possible these were audition recordings for the two roles, and the voice actors were simply asked by the developers to read the intro speech at the casting.
Minecraft: Java Edition
1
There is an unused enemy in the game called Giant. This mob is a huge Zombie with considerable health and deals heavy damage. They can only be hurt by being hit in the legs. Giants were added in the last version of Survival Test, but haven't been used since. They can still be spawned through hacks, however. Additionally, they can be spawned using the command "/summon Giant" in version 1.7 of the game.
The Legend of Zelda: Twilight Princess

Attachment There is an unused enemy in the game's data named "Meter Giant". It was likely a place holder model for measuring other objects in game.
