Batman: Arkham Knight

During The Ballad of Gay Tony's mission "In the Crosshairs", the building that Luis was on was supposed to catch fire, leaving him to find another way to escape. There are still text strings that reveal this.

The game has two unused maps in its files. One is called TestCJ, and the other is called AnimTest. Many of the shows in game are filmed in special areas in TestCJ, and an unused pedestrian can spawn there.
Grand Theft Auto III

The mobile version has some maps leftover from the cut multiplayer feature, suggesting they intended to re-add multiplayer to the mobile port. While they cannot load on the mobile version, with some modding, they can be loaded on the PC version to find that they were mostly finished.
Kirby Mass Attack

Attachment Unused files in the game's data suggests that it was originally possible to access a palette selection screen where the player would have been able to change the colors of the Kirbys, but it was scrapped for unknown reasons. It would have been possible to chose up to thirteen color palettes, with most of them corresponding to the Spray Paint colors in Kirby & The Amazing Mirror and Kirby: Squeak Squad.
Bloodborne

During the game's public alpha test, a player managed to gain access to a restricted area and was killed in an unfinished boss encounter with Father Gascoigne. When dying, the boss mutters the words "Umbasa", a common word used by NPCs in Demon's Souls, Bloodborne's spiritual predecessor. This may suggest that Bloodborne is set in the same universe as the Demon's Souls series or simply a reference to the series by the developers. This line of dialogue was removed from the final release.
Dark Souls II

There is unused dialogue in the game's files of Gavlan speaking an unknown language. This is likely the language of his people, the Gyrm.
Fallout: New Vegas

Despite a higher resolution texture being available in the game's resources, the Spiked Knuckles used by the player do not use the high resolution texture.

Attachment The character Cinna has a face portrait which goes completely unseen throughout the game. The reason why it goes unseen is because Cinna only ever appears on the player's team for a very brief time, and the player cannot access the submenus to see it like every other playable character.
Kingdom Hearts II

Roxas has unused quotes in the game that can be activated when Spoiler:Guiding Minnie to the Hall of the Corner Stone so Sora, Donald, and Goofy can fix it. This suggests that Roxas may have once served a bigger playing role, or it was simply used for testing.

Attachment There is concept art for a child model of the Emerald Herald in the game's files, however there is no dialogue to reveal what purpose it would have served.

Attachment The texture for the Skull Kid assist trophy contains an unused portion which seems to be the flute he used in Ocarina of Time and Majora's Mask. It is unknown what it could have been used for, though it's likley he was supposed to use it in some way when the player summons him.

Handsome Jack had dialogue recorded for the New-U Station revival taunts, but they were unused in the final release.
Metroid Prime

Attachment An unused version of the Phazon Suit can still be found in the games files, which takes a more blue/turquoise color scheme as opposed to the final black-and-red version.
Senior Artist Mike Sneath commented on it, saying:

"Yes you are right that is what was another version of the Phazon Suit which was done by another artist Gene Kohler. Gene made all the suits with the only exception being the black phazon suit. That suit you mentioned was cut because if I remember the Art Lead Todd Keller didn't feel the suit felt evil enough. That was the whole idea about liquid Phazon is that it transforms things into being aggressive and destructive and Todd wanted that to be reflected in how the suit look. That is all I can remember with regards to that suit you mentioned and I hope I got the story right on that as it was a long time ago but I believe that is why it got cut." [sic]
The Legend of Zelda: Twilight Princess

Attachment In early trailers of the game, Midna had blue and orange hair instead of the solid orange hair visible in the final version. Also, Link had the ability to dive as if he had equipped the Zora armor while wearing his regular tunic, but his regular swimming abilities are limited in the final game.
Demon's Souls

Attachment There is an unused model of a child in the game, who is speculated to be the child of the Filthy Vendor from World 5 (Valley Of Defilement). The child has no included animations.
Mario & Luigi: Bowser's Inside Story

In Mario & Luigi: Bowser's Inside Story, there are quite a few unused rooms without anything in them, most of them used for testing. One of the rooms appears to be a pipe in Dimble Woods leading into bowser's body that can only be accessed through the use of hacking. It was probably removed because once you've found all the attack pieces there you had no need to go back. Another one of those rooms are in Dimble Woods, along with what appears to be the Tower Of Yikk on the ground. This might suggest that originally bowser was supposed to fight it in dimble woods, but it was replaced with Bowser's Castle.

Claus has over 150 unused sprites, the most out of all the characters in the game, including full running and walking animations in a bathing suit.
