Super Mario Sunshine

Attachment There is an unused enemy named "Kug" found in the games files. Although there's no way to access it normally, it can be found under Pinna Park by glitching the camera, or by using a cheat device.
Borderlands

Within the game's files is a video file that was likely a trailer for the game. Never shown before or after the game's release, the video features the song "Greenfields" performed by the Brothers Four, as well a few small differences from the final game such as an early model for the character Lilith, and "Fyrestone" being spelled "Firestone".
Donkey Kong Country

Attachment The "Puftup" enemy from Donkey Kong Country 2: Diddy's Kong Quest was originally intended to appear in this game, and its idle animation is even found in the game's code.

Attachment There are unused sprites of King Dedede in Kirby Mass Attack's memory. These sprites are shown from above, suggesting that he was intended to be a playable character in the Strato Patrol EOS sub-game at one point in development.
Maya the Bee & Her Friends

Attachment The game was originally supposed to be a South Park game, but series creators Matt Stone and Trey Parker did not want to license an adult game for the Game Boy Color, so it was changed to a Maya the Bee game. Some South Park graphics still remain in the game's ROM.
Castlevania: Symphony of the Night

It was thought that, as the game takes place in Dracula's castle, Alucard should have his own room located at the top of the tall tower found to the right of the map. Within his bedroom would have been a character called the "Skeleton Carpenter", and as the game progressed the room would be built up with new furniture. There were thoughts of also including items and decorations throughout the game that the player could pick up and use to decorate the room. This feature was later cut from the game.
Castlevania: Symphony of the Night

During the game's prologue, in which text scrolls up the screen explaining the story leading up to the events in Symphony of the Night, narration was recorded to be played over the top of the text in the English release just as there is in the Japanese release. This was removed prior to release, as Konami's PR team felt the recording was bad, and detracted from the scene.
Disney's DuckTales

The Transylvania theme was completely different in the game's prototype, and the moon theme was originally 20% slower than in the final version.
Crash Bandicoot 2: Cortex Strikes Back

Attachment As it was shown in the E3 preview video, the "Ruination" level used to have a stone signpost showing the "easy" and "hard" paths through the level. Although the signpost has been removed in the final release, the code and data for it still remain in the game's files and are completely functional.

In N. Gin's boss level, there are 20 missile paths in the data, even though only 10 were used. A lot of these unused paths are also misplaced and can't hurt the player.

Several alternate palettes for enemy sprites are unused. The palettes would create differing forms of the Bat, Chaos Warrior, Dwarf, Goblin, Minotaur, Orc and Worm.

The game originally had a world ranking system that showed times and ranks from players around the world. There are also flags in the games files which were supposed to show what country the ranking was obtained in.

Demon's Souls

Attachment According to a text dump and some unused dialogue from the Crestfallen Warrior in the Nexus, there was a planned "true death" mode. It is unclear if it is just an optional mode akin to "hardcore mode" in other games or if it was previously planned to be a part of the regular game.

The "true death" essentially meant if the player died while in soul form, they would lose more than just the souls they collected beforehand. Due to how it was worded, it was not clear if it meant everything (gear, items, levels, etc) were lost or if the player would keep their obtained gear but lose their levels. The player would also be bound to a "Stone Monolith" after true death, but nothing more referring to the Monolith could be found in the files. It also meant that the player collecting their bloodstains would have not only given them their souls but also their body.

The mode was likely cut due to being too unforgiving, if the intention of it was to be a part of the regular gameplay. In the final version of the game, the bloodstains simply returned the lost souls to the player and they could simply re-obtain their body in a number of different ways.
Demon's Souls

Attachment An unused model of the Hydra from From Software's game Ninja Blade can be found in the game's data. It's registered as an object, as opposed to an enemy. No animation data is associated with it and it was likely meant for testing uses, not to actually be used in the final version of the game.

Attachment There is unused dialogue of a woman identified as "Hanging Woman." The dialogue suggests that the woman is in pain and misery, and wants the player to cut her down from wherever she is, killing her in the process.

The Hanging Woman is heavily implied to be the daughter of Stockpile Thomas, as in the beginning of the Boletarian Palace (World 1-1) there is a location of two hanging corpses that can be cut down, one holding a female armor set (Old Raggedy Robes) and the other a Jade Hair Ornament. According to the event triggered by Stockpile Thomas, the Jade Hair Ornament belonged to his daughter. It is not known if the Raggedy Robes belonged to her as well, or some other woman, who may have been her mother/Thomas's wife who also did not make it out alive or just another different person.

The event was never finished, as in the final version of the game the two hanging corpses found are actually male and already dead, which implies the two simply picked up the Jade Hair Ornament and Raggedy Robes before being killed.
