Fallout: A Post Nuclear Role Playing Game

Attachment There were plans to include a race of mutated raccoons called the S'Lanter, who had built a small community known as the Burrows. The S'Lanter and their home village ended up not making it into the game, for reasons such as not fitting in well in the Fallout world and also for time constraints, as the time needed to build and then animate the various versions of them was simply too much. The only remaining in-game mention of them is a Holodisk about FEV experiments located in The Glow.
Serious Sam II

Attachment Unused level loading screens included with the Deathmatch patch show there was going to be a Capture the Flag mode included with the game at one time. No coding nor models show any trace of a CTF mode, so these images are likely the only remnants from it.
The Elder Scrolls III: Morrowind

Attachment Unused sound clips of two of the voice actors named "Intro1aDDB.mp3" and "Intro1aJon.mp3" can be found in the games voice files. They are recordings of the male Wood Elf and male Argonian reciting the introductory speech to the game. It's possible these were audition recordings for the two roles, and the voice actors were simply asked by the developers to read the intro speech at the casting.
Minecraft: Java Edition

There is an unused enemy in the game called Giant. This mob is a huge Zombie with considerable health and deals heavy damage. They can only be hurt by being hit in the legs. Giants were added in the last version of Survival Test, but haven't been used since. They can still be spawned through hacks, however. Additionally, they can be spawned using the command "/summon Giant" in version 1.7 of the game.
The Legend of Zelda: Twilight Princess

Attachment There is an unused enemy in the game's data named "Meter Giant". It was likely a place holder model for measuring other objects in game.
Super Smash Bros. Brawl

Attachment There is unused tile for the Stage Builder which can't be used normally. It resembles a bump, and is fully functional.
Chainz 2: Relinked

Attachment Graphical elements of a level editor remain in the game's data, and were possibly used during the game's development. Leftover code can also be found, suggesting it may be possible to reactivate this feature.
Dragon Warrior III

Attachment In the Game Boy Colour version of the game, the game's files contain Monster Medal graphics for all the monsters of Dragon Warrior IV. These cannot be seen normally, and why they're in the data is not known.
Spyro: A Hero's Tail

Attachment Hogwarts can be found hidden in the game files. EuroCom also developed a Harry Potter game, so it was likely imported to test Sgt. Byrd's flight mechanics.
The Legend of Spyro: Dawn of the Dragon

On the back of the DS box, it mentions being able to fly whenever you like. However, in the actual game you are only able to fly in certain minigames, and flight is disabled for most of the game. It also states that you can play with a friend, but the game is strictly one player.
The Legend of Zelda: Ocarina of Time 3D

As Adult Link, stepping on the ice where Lord Jabu Jabu was during Young Link's trip to Zora's Domain in a certain way will trigger a glitch and transport Adult Link to the "Inside Jabu-Jabu's Belly" dungeon. The dungeon remains fully explorable, but no new chests appear, nor does the boss and miniboss.
BS Zelda no Densetsu

There is unused music comparable to the NES version in the game's ROM. The unused music was replaced with the broadcasted music on the Satellaview.
Spyro 2: Ripto's Rage!

Hidden in the game's files is an unused creature that resembles a mini version of Buzz.
Mario & Luigi: Superstar Saga

Attachment Inside the game's code are unused button and ability icons. The final "bubble" sprites are much larger, and the final icons are bigger and more detailed.
Sonic the Hedgehog

Each of the supporting characters have unused audio instructing Sonic, Shadow and Silver how to defeat each enemy. One example is Knuckles instructing Sonic on how to defeat an Iblis Golem enemy.

Attachment Among the textures of the Mushroom Kingdom stage is a sushi board.
Paper Mario: The Thousand-Year Door

Attachment Early designs for Smorgs can be found in the game's files. They look less fuzzy than in their final design.
Super Mario World

Attachment An unused 5-up logo can be found in the game's data. When used in game, the logo doesn't show up correctly. You can get a 5-up by bouncing on Wigglers, or by using a Game Genie code. It's fully coded, but the actual way the graphics are displayed is incorrect, as their properties are pulled from the code after the table with the score palettes. The 8x8 tiles used are incorrectly flipped horizontally and vertically.
Super Smash Bros. Brawl

An unused graphic of the Mario icon from Super Smash Bros. Melee can be found in the game's files. The Mario icon could mean that all the icons were going to be reused from Melee, but it also could have simply been a placeholder graphic.
Worms

Wormsong '95 can only be heard if the original game disc is played as an audio CD in a CD player or the like. Despite essentially being the theme of the game, it cannot be heard during gameplay. However, the later versions (Reinforcements and United) added a Wormsong Instrumental Remix as the theme of the game, yet that version still lacked the lyrics.
