Star Wars Episode I: The Phantom Menace

Attachment According to a game modeller that worked on the game who goes under the alias "Zanzibar", the grey-skinned alien guards found in the Tatooine levels were originally meant to be Gamorrean Guards. LucasFilm, however, for reasons unknown, requested that they be changed saying, "Lose the Gamorrean Guards. Make them something else."

The grey-skinned alien guards were designed by LucasArts artist Martin Yee.
The Lion King

There was originally a meter for Scar's health during the Pride Rock level towards the end of the game, however this was removed before release.

The monkeys featured in the "Simba's Pride" level originally threw obvious feces, however Disney requested this was removed from the final release.

Within the game's data are two unused voice clips of Amy saying "You go girl!" and "Way to go Perci". This may suggest that Perci was intended to be playable at one point during development.

Attachment There are 3D models for both Aeris and Tonberry in the game's data that are never used. Aeris may have been considered as an assist character, considering she appeared in Dissidia 012 Final Fantasy.

Etrian Odyssey

A battle theme entitled "The Battlefield that Never Sleeps" can be found in the game's soundtrack, but it is never used in-game. However, when its remake came out, Etrian Odyssey Untold: The Millennium Girl, the song was used when fighting against the Yggdrasil Core in a remixed edition, or as originally found on the soundtrack if the game's music setting is set to "old".

In the game's demo, the player had the option of letting go of Yorda's hand after catching her when she jumps across the bridge. This feature was removed completely in the final release.
God of War II

Aphrodite is labelled as a character in the game's instruction manual, but doesn't make an appearance until God of War III.

8-Player Smash (a mode introduced in Super Smash Bros. for Wii U) was originally planned for this game. However, due to technical performance, Sakurai stated "it was more than impossible."
Sonic the Hedgehog

In an early version of Sonic The Hedgehog shown in a pilot episode for the TV game-show "Nick Arcade", a rolling ball can be found towards the start of Green Hill Zone Act 1. This was removed from the game's final release.
Crash Twinsanity

Attachment There was once a character planned for the game called Capu Capu who was ultimately cut. He was originally the captain of the boat that took Crash to Iceberg Laboratory. He was cut as they had left it until the last minute to add him to the game, by which point finalizing the game had already begun.

While Xander Mobus, the game's announcer, recorded a shout of the game's name (much like Super Smash Bros. Melee), it went entirely unused in the final game's release.
JoJo's Bizarre Adventure

Attachment Unused sprites for Tower of Gray/Gray Fly can be accessed via the game's debug menu. Information for assembling the sprite is unfinished, and thus uses Jotaro's sprite assembly method instead. The sprites for Gray Fly are mostly finished, which includes various attacks and death animations.

These sprites would later be used in the PSX port, where Gray Fly is an enemy in Super Story Mode.
Sonic Adventure

Attachment During Sky Chase Act 2, Tails pilots the Tornado 2. The life bar, however, still shows the orginal Tornado 1 life bar. What's odd about this is that there is an unused graphic in the game's files that was going to be used for the Tornado 2, but goes entirely unused.
Metal Gear Solid 2: Sons of Liberty

In the original design document, it was possible for the Spoiler:hostages to die after Metal Gear Arsenal was activated. Around 50-60 bodies would have been able to be seen in the water, with the water being red from their blood, which in turn attracted sharks into the area. Both Snake and Raiden would have to go through the area afterwards.
Leisure Suit Larry: Love for Sail!

Attachment At the very end of the game was a teaser hinting the next installment for Leisure Suit Larry, entitled "Leisure Suit Larry Explores Uranus". The actual title for the game was changed to "Leisure Suit Larry: Lust In Space".

According to Al Lowe, the game's story would have follow Larry after he was captured by "amazonian warrior women" from a distant planet. They would have brainwashed him into believing that he was in a disco paradise, and then use Larry to father a race of alien-human hybrids to take over the earth. He would have then realized what was happening, only to then have to then save the earth.
