In the Spanish Official Nintendo Magazine, a picture was shown that included Diddy Kong in the cast of characters, suggesting that he was a planned character for the game, but was cut. Diddy Kong would later be included as one of the last four characters for the Deluxe port’s Booster Course Pass, nearly a decade since the original game’s launch.

Sometimes I like to think that the additional characters in the Switch port were those intended for the Wii U game that didn't make it due to time constraints. Diddy and Kamek might've even been among them, and could've been in the Switch port's base game if not for less so the Inklings and more so the decision to give different genders separate slots.
