Sonic the Hedgehog

In an early version of Sonic The Hedgehog shown in a pilot episode for the TV game-show "Nick Arcade", a rolling ball can be found towards the start of Green Hill Zone Act 1. This was removed from the game's final release.
Crash Twinsanity

Attachment There was once a character planned for the game called Capu Capu who was ultimately cut. He was originally the captain of the boat that took Crash to Iceberg Laboratory. He was cut as they had left it until the last minute to add him to the game, by which point finalizing the game had already begun.

While Xander Mobus, the game's announcer, recorded a shout of the game's name (much like Super Smash Bros. Melee), it went entirely unused in the final game's release.
JoJo's Bizarre Adventure

Attachment Unused sprites for Tower of Gray/Gray Fly can be accessed via the game's debug menu. Information for assembling the sprite is unfinished, and thus uses Jotaro's sprite assembly method instead. The sprites for Gray Fly are mostly finished, which includes various attacks and death animations.

These sprites would later be used in the PSX port, where Gray Fly is an enemy in Super Story Mode.
Sonic Adventure

Attachment During Sky Chase Act 2, Tails pilots the Tornado 2. The life bar, however, still shows the orginal Tornado 1 life bar. What's odd about this is that there is an unused graphic in the game's files that was going to be used for the Tornado 2, but goes entirely unused.
Metal Gear Solid 2: Sons of Liberty

In the original design document, it was possible for the Spoiler:hostages to die after Metal Gear Arsenal was activated. Around 50-60 bodies would have been able to be seen in the water, with the water being red from their blood, which in turn attracted sharks into the area. Both Snake and Raiden would have to go through the area afterwards.
Leisure Suit Larry: Love for Sail!

Attachment At the very end of the game was a teaser hinting the next installment for Leisure Suit Larry, entitled "Leisure Suit Larry Explores Uranus". The actual title for the game was changed to "Leisure Suit Larry: Lust In Space".

According to Al Lowe, the game's story would have follow Larry after he was captured by "amazonian warrior women" from a distant planet. They would have brainwashed him into believing that he was in a disco paradise, and then use Larry to father a race of alien-human hybrids to take over the earth. He would have then realized what was happening, only to then have to then save the earth.
Vanquish

There was originally going to be a robot dog companion that assisted in combat and combined with Sam's armor. The concept was eventually dropped.
Tales of Phantasia

Elven Mayor Brambart was originally planned to be a playable character early on in development. An early pre-release screenshot of the Super Famicom version of the game indeed shows him as playable.

When hacked into the game using Pro Action Replay codes, his class is labelled as "Unknown." In game, he uses Klarth's sprites, summons and weapons as well as Arche's tactics. He lacks an "ultimate" weapon of his own.

He lacks a sprite for riding a Rheaird. The game will crash when boarding them with Brambart in the player's party.
EarthBound

Attachment Unused miniature sprites of what appear to be the Photo-Man and an Escargo Express delivery man can be found within the game's code, suggesting that they may have appeared in the Lost Underground at some point during development.
GoldenEye 007

Attachment The Terrorist multiplayer character cannot be found anywhere in the single player game. However, the instruction manual for the game lists the Phantom weapon as a 'terrorist favorite', and the Phantom is only found on the Frigate level. The Frigate level is also the only level with hostages, which would likely indicate the involvement of terrorists. This suggests that the Terrorist was once used as an enemy on the Frigate, but was removed and kept in multiplayer.
Five Nights at Freddy's

Attachment Graphics exist of an unused design for the cameras on the monitor, giving a more precise location as to where they are. They also show earlier locations for some cameras prior to the game's final locations being decided upon.

Originally it was planned that, upon death, Samus would scream as her suit would explode to reveal her naked body. However, when the game was released, Samus was given clothes and her scream (recorded by composer Minako Hamano) was removed after being deemed too sexual.
The Legend of Dragoon

During development, Shirley was going to be an optional boss along with the other Dragoons in Vellweb. However, due to the White-Silver Dragoon's ability to heal 100% of its health while also having an unlimited MP supply, the boss was cut from the title as it was considered an unbeatable fight. The data for this battle can still be found on the game's disc.

Attachment An early unused sprite of Mario jumping can be found in the game's data. He has different shading and his arm is bent differently.

Attachment There is an unused area in the game for the Bionis' left shoulder. It is unknown why it went unused, but it can be seen in a few cutscenes, most notably in the cutscene after defeating the final boss, Spoiler:Zanza.
Nitronic Rush

Inside the game's data, there are two vehicles that are unfinished called the Intimidator and Cycle. These vehicles can be unlocked by changing data values inside the game's code. Both are usable but are buggy.
