James Bond 007: Agent Under Fire
1
The game originally started off a PlayStation 2 version of 007: The World is Not Enough, before making a new James Bond story and game altogether using the engine from said game. When asked about the game's delay and title change, developer Jon Horsley stated:

"We thought we could deliver a good [The World is Not Enough (TWINE)] game for the PS2--but we also thought we could combine forces with some of our other studios and deliver a great original Bond experience with Agent Under Fire. The extra time has provided us the opportunity to create an entirely new game, not tied to a specific movie, and address some points that we knew we couldn't get into TWINE under that timeline. And we cherish and respect our players too much to pass up the opportunity."
Super Smash Bros. Ultimate

According to Sakurai in a Famitsu column, Sephiroth's inclusion as DLC in this game was his attempt to include more villains and/or bosses into the series as fighters, stating that the inclusion of such characters as playable was "rare". For one reason or another, he felt Final Fantasy VII's lead antagonist was an appropriate choice for this. He also stated that his game developing philosophy for these types of characters was that he wanted them to "feel like bosses" when playing as or against them.

The unique new fossil Pokémon of Sword and Shield and their even more unique mix-and-match gimmick are a reference to Paleontological history. Some of the earliest recorded Dinosaur bones and discoveries were found by British scientists (the Galar Region is based on the United Kingdom) and during the earliest discoveries many of those scientists, due to knowledge of these newly-discovered prehistoric beasts being very primitive at the time, did reckless things and made a lot of rather egregious mistakes including taking bones from one species of Dinosaur and applying them to another species' bones, both believing and claiming that they were of the same species. This is reflected in the gimmick where two of the player's fossils are fused into one of four Pokémon that clearly look like the parts used to fuse them do not match to the point that even the Pokédex descriptions seem baffled at their existence and how they are still alive. The scientist in-game who does this is called Cara Liss, or "careless".
Just Dance 2020
2
The announcement of a Wii version of Just Dance 2020 was met with confusion from some fans as to why an eighth generation game would be released on a discontinued console, speculating that it was because hospitals and rehabilitation centers still used the Wii for physical therapy and recreation, with Just Dance being a popular series for those purposes. However, Ubisoft released an official statement in response to the speculation that claimed that "it would be inaccurate to say that Just Dance is available on the Wii solely because it’s developed for physical therapy purposes" and that "a lot of our players are children and families who continue to play on Wii."

In 2003, German goalkeeper Oliver Kahn and German soccer club FC Bayern Munich both successfully sued EA for including Kahn into the game as the goalie for Germany's national soccer team without their permission. This resulted in EA being banned from selling the game in Germany, but allowed Kahn to be represented as the goalie for FC Bayern Munich rather than the national team in all future FIFA games featuring him in a deal EA brokered with the German Football League (Bundesliga). The case marked the first time a professional soccer player filed a suit against his representation in a video game.

Attachment If the player goes to the bathroom in V’s homestead, three seashells can be found on a ledge by the toilet. This is a reference to the 1993 film "Demolition Man", where in John's bathroom, there are three seashells next to the toilet that replaced toilet paper in the future, yet the film never reveals how they work.

Attachment In Huey, Dewey, and Louie's Item Shop in Traverse Town, there is a poster of a steamboat with the caption "RIVER BOAT" in a large cartoony font, possibly as a reference to the 1928 Mickey Mouse short film Steamboat Willie. The art style of the late 1920's black and white Disney cartoons as a whole would be adapted as an explorable area in Kingdom Hearts II called Timeless River.
Super Smash Bros. Ultimate
1
Sakurai and his team originally had different plans for a Xenoblade Chronicles 2 DLC character. He tried to include Rex as a playable character alongside Pyra, at first thinking of an Ice Climbers-like system where the player would control both characters at the same time, but this ended up presenting programming problems including one involving the game's memory capacity due to the size of the characters. He then had an idea of making Rex a background character whenever Pyra fights, in a similar manner to the Pokémon Trainer. He eventually felt this second method would also be taxing to the game and that fans would not be fond of it anyway so it was scrapped. He then came up with the idea to have Pyra be a transforming character (similar to how Zelda and Shiek were before Super Smash Bros. for Nintendo 3DS and Wii U) with her turning into Mythra and additionally have Rex appear only in taunts, Final Smashes, and other extraneous details involving the characters.
